Since your body type should avoid eating red meat, these chicken burgers make a great alternative to the classic beef burger. The mushroom caps in place of buns make this an extra healthy, and tasty option.
-2 whole chicken breasts, boned and skinned (turkey may be substituted)
-2 tablespoons dried bread crumbs
-½ medium onion, minced
-4 large mushroom caps (optional)
-1 egg ½ teaspoon salt
-1 teaspoon of vegetable oil
Grind the chicken in a meat grinder or in a food processor (or buy ground chicken breast in the supermarket).
Add the remaining ingredients except the mushrooms and oil. Blend and form into four patties. Heat the oil in a skillet and cook over medium heat, turning once.
Meanwhile, place the mushrooms in a toaster oven or under the grill for 5 minutes.
Serve the chicken burgers with a mushroom on each.
